Summer sandwich made from garden ingredients
Slice the zucchini lengthwise, about 1/2 in think.
Slice the green pepper into strips about 1/4 in. thick strips.
Slice the green tomato into 1/2 in. rounds.
Slice the onion into thin rounds.
Make a batter out of the flour, egg and milk and cover the zucchini and green tomatoes. Skillet fry these in about 1 cup oil .
While they are frying, heat the oil in a sauce pan and cook the strips of green pepper in the oil.
Slice the Italian buns lengthwise and set aside.
After the veggies are cooked, start layering them on the buns. Add the shredded parmesan cheese and onions.
Serve immediately, best with cold fresh milk. Salt and pepper to taste
Optionally, you can add sliced black olives, jalapeno peppers or other ingredients you would like.
My dad made these many times with fresh products from our garden. I made many times for my friends, usually with cold beer, some potato chips. These were always hits at our house.
