Make these in the summer when in the mood for something crunchy, tart and garlicky. If you have issues digesting cucumbers like alot of people do, try English cucumbers. They are less seedy and for some reason digest better and not to mention they are crispier.
Slice cucumbers, onions and garlic and place in bowl. Add salt, pepper and vinegar. Let sit in fridge for at least 15 minutes but preferably 1-2 hours. Sometimes I will slice and add a jalapeno to this to give it a bite. Delish!
