A lot of chopping
1. Cook chicken well and de-bone and shred. Pre-cooked rotisserie chicken works well.
2. Heat oil in heavy pot to medium high.
3. Add onions, garlic, peppers cumin, coriander,1 tsp salt and saute for 5 minutes.
4. Add can of tomato paste and cook for 1-2 minutes, stirring constantly.
5. Add chicken stock, stir well and simmer for 20 minutes.
6. Add the cooked chicken and simmer for 10 minutes.
7. Add lime juice.
8. Crumble 4-5 Gurrero chips into soup.
9. Salt and pepper to taste.
Serve with Gurrero chips and a dollop of crema and avocado dices.
