puffy pancake great with lemon juice, powdered sugar and fruit
Preheat oven to 425. Melt 2 tbls butter in 10-inch oven-proof pan (make sure the handle isn't plastic). Tilt to coat sides. Whisk remaining ingredients in bowl and pour into melted butter. Cook 1 minute. Place pan in oven and bake 12 to 15 minutes, until puffed and golden. Squeeze lemon juice over the top and sprinkle with powdered sugar. I like to add raspberries or strawberries on top (after baking). Serve immediately.
