sweet & tangy heat friendly potatoe salad
1. Place potatoes in large pot, cover with cold water and cook til tender. Drain, cool, skin then slice or quarter into a large bowl
2. slice and scatter scallions on top
3. salt and pepper to taste
4. chop and cook bacon til crisp discard half the grease. Let cool completely.
5. beat eggs, add sugar, vinegar and water.
6. pour into pan of bacon, cook and stir over med low heat until thick.
7. pour over potatoe/onion mixture and gently fold in sauce.
