Beets are high in vitamin A and help cleanse the liver. If you are making several dishes at once with your salad shooter, grater or food processor, do the beets last. That way, you won’t have pink vegetables and you won’t need to stop to disassemble and wash any equipment.
In a small bowl, combine the beets, ginger, maple syrup, tamari and lemon juice; toss. Let the flavors blend for a few minutes before serving.
