These gingerbread men are a cross between gingerbread cookies and sugar cookies. Kids love these as they do not have such a strong taste.
1. Cream dry pudding mix, butter, and brown sugar. Stir in egg. In another bowl mix flour, baking soda, ginger, and cinnamon. Stir into pudding mixture. Cover and chill for 1 hour.
2. Preheat oven to 350 degrees. Grease baking sheet. On a floured board roll dough out to 1/8 inch and cut shapes using cookie cutters.
3. Place cookies 2 inches apart and back for 10 to 12 minutes. Cool and decorate.
