ginger cookie!
Preheat oven to 350 degrees.
Line baking sheet with parchment paper
Whisk first 5 ingredients in a large bowl.
Beat sugar and canola oil in another large bowl until pale in color, about 2 minutes.
Beat together egg and molasses. Add candied ginger.
Gradually stir in flour mixture. It will be stiff dough.
Roll about 2 tablespoons of dough into a ball and toss in sugar.
Place on baking sheet about 2 inches apart (they will spread)
Bake until cookies are dry around edges and cracked on top.
Let cool 2 minutes and transfer to rack to continue cooling.
Store in air-tight container.
