Suggest a better description1. In a medium sauce pan, add ketchup, brown sugar, cider vinegar, and hot sauce. Whisk until brown sugar is dissolved.
2. Remove about 1/4 of the mixture for glazing the meatloaf while cooking. Bring the rest to a simmer and cook for five minutes, stirring frequently.
3. Put oven on broil.
4. Add oil to a pan, and brown the shallots and carrots. Add the garlic and cook until fragrant.
5. Allow mixture to cool and add to mixing bowl with ground beef. Combine.
6. Add bread crumbs and whole milk and combine.
7. Mix eggs, egg yolk, mustard, worcestershire sauce, thyme, parsley, salt, and pepper. Add mixture to meatloaf.
8. Combine all ingredients and transfer to a cookie sheet or other baking sheet with a rim. Form into a loaf about 9 by 5 inches.
9. Place the meatloaf under the broiler until well browned, five minutes.
10. Brush with half of the reserved glaze, brown again for about two minutes.
11. Reduce oven temp to 350 degrees. Brush with the rest of the retained glaze, put in oven for 40-45 minutes.
12. Remove from oven, cover meatloaf, and allow to rest for 20 minutes before slicing and serving with the zesty ketchip glaze.
