Suggest a better descriptionWash artichokes in cold running water, drain. Trim stem close to base, remove tough outer leaves near bottom. Cut 1 inch from top with sharp knife. Snip off sharp leaf tips with scissors.
Stand artichokes upright in deep saucepan just large enough to hold them snugly. Add remaining ingredients. Pour in 1 inch boiling water.
Boil artichokes, uncovered for 5 minutes, then cover and simmer 25-35 minutes until a leaf can be pulled out easily.
Add more boiling water if needed.
Remove artichokes, invert and drain well. Serve with butter or Hollandaise sauce.
To eat artichokes, pull off leaf separately with fingers, dip in sauce. With teeth, scape off fleshly portion at base of each leaf. Cut away and discard the choke (thistle-like center). Then eat the heart (base of artichoke) with fork.
