"When women in Thailand become Buddhist nuns, they wear white robes. This sweet dish of bananas in coconut milk is white as well, giving rise to its charming Thai name, "bananas ordained as nuns". Real Thai (sounds like a good breakfast)
In a medium saucepan, combine the coconut milk, sugar, and salt. Place over medium heat until the mixture reaches a gentle boil, 5 to 10 minutes. Stir occasionally to dissolve the sugar, salt, and any lumps of coconut cream. The mixture should not reach a vigorous boil.
Meanwhile, peel the bananas,halve them lengthwise, and then cut them into 2" chunks. You should have about 4 cups of banana chunks. When the coconut milk reaches a gentle boil, add the bananas and cook until the mixture returns to the boil, 1 to 2 minutes. Remove from the heat and let cool in the saucepan. Serve in small bowls warm or at room temperature.
Note: Freeze leftovers for a coconut-banana milkshake.
