This fresh pasta is eggy and supple, like the fresh pasta you remember. It's a treat, whether tossed with a simple sauce, layered into lasagna, or rolled into cannelloni. Finely, powdered whey adds protein, which gives the dough some strength in the absence of gluten. It's important that you weigh the flours, but if you choose to measure by volume, add the water gradually, just until a firm dough forms.
Measure the arrowroot starch, tapioca flour, sweet rice flour, millet flour, whey protein, guar gum, xanthan gum, and salt into the bowl of a stand mixer fitted with the dough hook, or a food processor. In a large measuring cup, whisk eggs with 3 tablespoons of the water and add to the dry ingredients. Mix on low until the dough starts to come together. Turn off the mixer and press the dough together. You may have to sprinkle in some of the remaining tablespoon of water to moisten all the flour. Turn up the speed and beat for 2 minutes. In the processor, the machine will start to labor when the dough gets stiff, so take the dough out, place it on a starch dusted countertop, and knead it manually for 2 to 3 minutes, until smooth and flexible.
Divide the dough into four 4-ounce portions, wrap the portions you are not using with plastic wrap, and either roll the dough out with a rolling pin on the counter or in a pasta rolling machine. Repeat with the remaining portions of dough. Leave as lasagna sheets or cut into noodles.
Bring a large pot of salted water to boil for the pasta. Cook the noodles for 1 1/2 to 2 minutes, then test. They should be tender but firm, just a little softer than al dente dried pasta. Drain and rinse well with warm water if serving warm, or cold water if serving cold, and serve immediately.
