Potato pasta that is so delicious
Place cubed potatoes in a large saucepan with salted water.
Boil about 10 minutes until soft.
Drain the potatoes and rice the potatoes.
If you do not have a potato ricer then mash the potatoes well. Make sure to get rid of all the lumps.
Place the potatoes in a large mixing bowl, or on a clean bench or countertop.
Add the flour, parm, salt and pepper, mix well.
Make a well in the middle of the potato and flour mixture and add the egg and ricotta into the well.
Fold the dry mixture into the wet ingredients in the middle using your hands.
Keep mixing until well incorporated.
Knead the dough for a bit until your dough is well mixed.
Sprinkle more flour on the bench and grab a handful of dough.
Roll the dough into a rope about 1/2 inch thick.
Using a knife cut the rope into 1/2 - 3/4 inch pieces.
You can be done if you want. I prefer to roll each of the pieces over the inside of a fork to make tine marks on the pasta.
Place the pieces on a parchment lined sheet pan.
You can keep them on the counter or put in the frig until you are ready for dinner.
Boil gnocchi the same as any pasta. They will sink initially and start to float when they are almost cooked.
Cook the gnocchi for 4 - 6 minutes max depending on the size of the pasta.
Place them in a bowl with the finished sauce or right into the serving bowls with sauce and stir.
They will stick together if you plop the cooked gnocchi in a pan together like spaghetti. So be prepared to plate when they are done or to put in the finished sauce in a serving dish.
