Heat oven to 350 degrees
Boil potatoes with skins on & cool completely - peel and dice potatoes. (Can use pre-cut frozen cubed potatoes - already cooked)
Saute onions
Combine/melt sour cream and 8 ounces butter. Then melt cheese all at low heat.
Add sour cream/butter/cheese, onions, salt & pepper to cooled potatoes. Mix all ingredients and dot with remaining 2 oz butter.
Cook to until hot & bubbling with sight crust.
