As titles says, these are Grandma Patti's refrigerator cukes/pickles. A family (and potluck) favorite!
The amount or cucumber and onion varies, the pickled onions are excellent to eat and great on sandwiches.
Can be made with English or pickling cukes with skin on or off or peeled regular cucumbers.
Cut cucumbers in slices and put in pan. Slice onions on top; put 1Tbs. salt on mixture. Cover with ice; let set 3 hours.
Mix: 1 c. sugar
3/4 c. white vinegar
celery seed
Put on stove and boil, make enough to cover cukes and onions in jars.
Stir and drain cukes and onions. Remove unmelted ice and drain. Do NOT rinse.
Put in jars and fill with sugar & vinegar. Keep in fridge.
