French Canadian White Bread. Yield is one ounce servings.
Dissolve yeast in 1/4 cup of lukewarm water. Add sugar, salt, shortening, water and 2 cups of flour. Beat until smooth. Then add remaining flour 1 cup at a time. Put on floured board and let rest 10 minutes. Knead until smooth and blistered. Place in greased bowl, coating ball. Cover, and let rise 1 hour, punch down, let rise 1 hour. Place on board, divide into 2, shape into loaves and put in greased bread pans. Let rise 1 hour. Bake at 375 for 40 minutes Makes 2, 24 ounce loaves.
