MEATBALLS: Preheat oven to 400F. Spray a mini muffin pan with cooking spray. Set aside. Tear the bread into 1/2" pieces and place in large bowl. Pour milk over and mix lightly to coat. Allow to sit for 10 minutes. With a fork, mash into a paste. Add remaining meatball ingredients and mix until completely combined. With your hands, create golf ball sized balls (about 12-14) and place in prepared muffin pan. Bake for 14-16 minutes, or until internal temp reaches 165F.
SALAD: Prepare the salad by adding all the ingredients into a small bowl and stir till combined. Set aside.
ORZO: Prepare the orzo by following the package instructions. OnTce cooked, strain and lightly dust with pepper and olive oil. Stir till coated.
FETA: Add ingredients to a high-speed food processor. Process till whipped and creamy. Place in the fridge to set while you plate everything else.
Serve by adding the whipped feta, orzo, meatballs, then salad to a large bowl. Enjoy!
