A delicious healthy filled baked potato.
Bake the potato until soft in the centre and crisp on the outside - you can start it off in the microwave and then crisp it in the oven on a baking tray for the final 20 minutes. Pre-heat the grill. Cube the cucumber and Feta and mix together. When the potato is ready, split it open and fork into the flesh the sesame oil and chopped basil, then push the flesh back into the skins and spoon the feta/cucumber mixture on top. Place the whole dish under the grill until some of the Feta begins to melt.
Serve on a bed of mixed lettuce, accompanied by a small glass of mineral water.
