A nice summer dish.
For dressing mix vinegar and mayonnaise with small whisk. Stir in garlic, salt, and pepper. Slowly whisk in oil and emulsify to make vinaigrette.
Boil pasta in 1 gallon salted water. Cool to room temperature. Meanwhile, sprinkle prepared cucumbers with salt and let stand while preparing other ingredients.
Mix tomatoes, feta, olives, mint or parsley and onion. Set aside.
Mix salad with pasta and refrigerate. When ready to serve, add dressing and marinate for 15 minutes.
