Suggest a better description1. Make the dressing: In a medium bowl, whisk egg yolks. Slowly, a few drops at a time, add ¼ cup oil, whisking constantly, until thickened. Once the dressing has emulsified, whisk in another ¼ cup oil in a slow, steady stream.
2. In a blender, purée parsley, watercress, chives, 2 tablespoons lemon juice, the tarragon, anchovies, garlic, and remaining oil.
3. Whisk the herb purée, vinegar, 1 teaspoon salt, and ½ teaspoon pepper into the dressing. Season to taste with more lemon juice, salt, and pepper. The green goddess dressing can be made ahead; it will keep in a sealed container in the refrigerator for up to 5 days.
