Suggest a better description- Rub seasoning, pepper and salt to taste on both sides of the chicken breasts.
- Grill the chicken breast as you like. Either on the grill or on an indoor grill or griddle.
- Let cool and dice or pull into bite size pieces.
- Cool in the refrigerator for at least an hour.
- Using a grinding stone, add the salt to the garlic and grind into a fine paste.
- Pour the oil in a small mixing bowl and add the cilantro and garlic paste.
- Mix thouroughly with a wisk and set aside.
- Chop the lettuce and place in serving bowls
- Add the chicken
- Place a generous helping of the quacamole in a mound on the salad
- Drizzle a fair amount of the dressing over each salad
- Sinkle the cheese over the top
- Serve immediately
