One of my favorite sandwiches to make. Simple with amazing flavors. You can substitute the chicken thigh for breast but you should flatten it out if that's what you're doing
1. Salt Brine your chicken. Throw your chicken thighs into a bowl and salt/pepper them. Allow to sit for at least one hour (or up to 24) in order to really bring the flavor out of the chicken.
2. Prepare the marinade by mixing mayo, cumin, hot sauce, salt and pepper (or the seasoning of your choosing, this is easily customizable)
3. Heat a cast iron over medium-high heat. Cook the chicken on each side for 3-4 minutes until well browned. Set aside on cutting board to rest. Toast your buns.
4. To assemble, add the chicken thigh, tomatoes, pickled onions, cheese, and lettuce to the bun and enjoy.
