Preheat broil.
Bring large pot of salted water to a boil. Remove lobster meat from the tails. Boil for 1 minute or until no longer translucent. Place meat on greased roasting pan. Baste with melted butter. Broil until lightly golden, 5-8 mins.
Meanwhile, in a medium bowl, whisk the mustard, shallots, grapefruit juice, vinegar & lime juice. Set aside.
Dice the avocados & place in large bowl, keeping the shells. Add lime juice & cover with foil. Dice the lobster meat approximately same size as avocado. Add lobster, red pepper, jicama & onion to the avocado & mix gently. Stir in approximately 1/2 of vinaigrette to taste. Add salt & pepper. Spoon mixture generously into avocado shells. (May cover & chill.)
