Mix spices and rub on quail.
Stuff with jalapeños, wrap in bacon, and secure with toothpicks.
Toss mesquite chips in grill. Grill quail on indirect heat until about 120 degrees. Then move to direct heat to crisp bacon. Remove when quail is 160 degrees.
Serve with grilled avocado and Spanish Caesar salad.
