Sweet, spicy and smokey, these kebabs are ideal for a cookout or a quick weeknight meal
1. Heat grill to 350 to 400
2. Pat shrimp dry with paper towel and place in a large bowl. Add olive oil, garlic, onion, lemon zest, and coriander. Toss to combine. Refrigerate for 15 minutes
3. Place pineapple chunks in a separate bowl. Drizzle with chili oil; toss to coat evenly.
4. Using 8 metal skewers, alternate shrimp and pineapple
5. Place skewers on an oiled grill grate and cook uncovered until shrimp are pink.
