This dip is similar to some Texas Caviar recipes. It's great for tailgates and parities, because it's vegetarian/vegan friendly and meat eaters will LOVE it too! Even the pickiest eaters will love this stuff, trust us. It's a staple at our house.
Mix dressing ingredients first, then add beans, peppers, and tomato. Marinate in the refrigerator for about an hour. Serve with tortilla chips.
You can use any kind of peppers--even jarred pepper rings.
