Suggest a better descriptionIn a 4 quart saucepan heat olive oil and cook onion, garlic until tender. Add collard greens, chicken stock, water, Jalapeño pepper and ham bone. Simmer until greens are tender, about 20 minutes.
Meanwhile, rinse and drain the black-eyed peas. Mash half of them with the back of a spoon and add all to the soup mixture.
Add the tomato and simmer 5 more minutes. Season with salt and pepper. Stir in cider vinegar and hot sauce.
Makes about 4 cups, or 2 servings as a main course. Recipe can be doubled.
