Preheat 400.
Line pastry shells with foil. Bake at 400 for 5 mins. Remove foil. Bake 5 mins longer. Remove from oven.
Divide ham & cheese evenly between pastry shells.
In large bowl, whisk eggs, cream and salt & pepper. Pour half into each shell (cover & freeze - optional).
Bake at 400 for 35-40 mins until knife comes out clean. Let stand 5-10 mins before cutting.
