Hamburger, rice, potatoes and carrots baked in tomato juice
Saute the onions in oil until soft
Pam the bottom of a large casserole dish
Pour 1 cup of rice along the bottom of the dish
Dice the potatoes and spread across the rice
Pour the onion mix atop the potatoes
Place the ground beef on top of the mixture covering entire dish
Place diced carrots on top of the beef
Pour 1 can of tomato juice into the casserole until all the contents are covered
Poke holes in the beef to allow the juice to penetrate to the bottom
Place in oven at 325 for 2-3 hours
