Hamburger Vegetable Soup is a hearty weeknight dinner filled with lean ground beef, potatoes and carrots for a delicious family dinner.

INGREDIENTS
1 pound lean ground beef (90/10 or 80/20)
8 cups beef broth
3 medium potatoes, peeled and diced
1 medium onion, diced
4 small carrots, peeled and sliced
3 celery stalks, sliced
4 cloves garlic, minced
ΒΌ cup Worcestershire Sauce
2 teaspoons granulated garlic
2 teaspoons dried thyme
2 teaspoons onion flakes
2 teaspoons smoked paprika
1 teaspoon onion powder
1 teaspoon kosher salt
1 teaspoon pepper
INSTRUCTIONS : Brown ground beef in a skillet over medium-high heat, breaking it up to brown on all sides. If using 80/20, drain excess grease and discard.
Bring the beef broth to a boil in a soup pot or large dutch oven.
Add potatoes, carrots, onion, celery and garlic to boiling broth.
Stir in the ground beef.
Add with Worcestershire sauce, garlic, thyme, onion flakes, smoked paprika, onion powder, salt and pepper.
Cook at a low boil for 15 minutes or until vegetables are fork tender. Lower to simmer until ready to serve.
NOTES
Store leftover soup in an airtight container in the refrigerator up to 4 days. To freeze, use a freezer-safe container, label with the date and freeze up to 3 months.
Reheat soup in a pan over low heat, stirring occasionally until heated through.
Variations
Tomato sauce or diced tomatoes with Italian seasoning will add delicious flavor.
Substitute ground turkey or ground chicken for the ground beef if desired.
Use any vegetables that you have on hand: green beans, corn, bell peppers, sweet potatoes or mixed frozen vegetables work well.
Pasta is a great addition to hamburger soup, use small shell pasta or any type of pasta right that you have on hand. You can even stir in cooked pasta right before serving.
Crock Pot Instructions
Mix all of the ingredients into a crock pot and cook on low for 6- 8 hours or on high for 3-4 hours.
