Prepare apples first so they cool while you make the crust
Melt and brown butter
add cubed apples, sugar, salt and cook over high heat until almost done.
Add cinnamon and dash of nutmeg
finish cooking and cool.
About 80 grams per pie
Make Crust - About 90 grams per pie
Divide crust into 8. Roll flat.
Moisten with water. Add apple. Fold, seal, egg wash, and sprinkle with sugar. Punch vent holes and bake @ 400°F for 20min on tray, or ~ 35 min on cookie sheet.
If frozen, bake at 375 for ~45 min

Made enough for 9 pies
Made 7 pies each with 104 gm dough (were on the large size)

4 large apples (858gm) became 687 gm cubed
2-1/2 T Butter
107 gm sugar
1-1/2 t cinnamon
became 610 gm filling (could have used a little more--shoot for ~800 gms cubed; 1000gm whole apples)
Worked well with a full dough recipe (715 gms)
Made 8 pies
