Combine sugar and conrnstarch in bowl.
Bring water to boil, add sugar and cornstarch mixture, bring back to boil for 1 minute. Stir constantly.
Remove from heat, add butter and one optional flavoring. Whisk to blend if using nutmeg.
Serve immediately or refrigerate for later use.
