Combine eggs, evaporated milk, salt, and black pepper in a large bowl. Add potatoes, cheese, onion, green pepper, and ham. Mix well. Pour mixture into greased 13"x9"x2" baking dish. Bake at 350 degrees for 60-65 minutes or until set.
