I try to use healthier ingredients in foods I make but hide them so you'd never know it! These enchiladas are a huge hit with friends and family.
Ground Turkey Instructions:
Brown meat in pan with Mrs. Dash
Put wet ingredients into mixing bowl.
--1 can enchilada sauce
--cottage cheese
--1/2 bag cheddar cheese
--cooked turkey
--add extra Mrs. Dash to taste if you want some extra spice.
Scoop a spoonfull of this mixture into center of whole wheat tortilla, wrap/close tortilla. Place tortilla with edges facing down in oven-safe dish. Repeat for all mixture/all tortillas.
Cover folded enchiladas with remaining sauce and cheddar cheese (I add 1/3 cup of water and some extra Mrs. Dash at this point too). Bake at 400 degrees for around 15-20 minutes (depending on your oven)
I often mix 1 can green enchilada sauce and 1 can red enchilada sauce, but when I'm making them for picky eaters and people who don't like as much spice, I make them with just green. They're easy to freeze and eat as leftovers or take to work and heat up for lunch. (I think they're better leftover!)
