Delicious stew, with veggie substitution options
Step 1: Preheat oven to 300 degrees. Season beef with salt and pepper. In dutch oven, on high heat, sear and brown all sides in batches not overcrowding pot. Set browned meat aside. All the following veggies are optional. On medium-high heat, add mushrooms to pot and close lid for 5 minutes allowing mushrooms to sweat and liquify the browned bits on bottom of pot. Open lid and stir mushrooms. Add onions and asparagus and cook for 5 minutes, stirring often to reduce browning on bottom of pot. Create well in center of pot and add minced garlic allowing to cook until browned and aromatic. Stir veggie mixture.
Step 2: Add flour and tomato paste and mix with veggies allowing the bottom of pot to get slightly browned. Just before burning, begin slowly mixing wine in while stirring or whisking. You are trying to make sure the flour clumps dissolve and the brown bits on the bottom are also dissolved. Add all remaining Step 2 ingredients as well as the beef - make sure you also add any juices that came from the beef. Bring to boil, place lid on and place in center oven rack. Cook for 2 hours
Step 3: All the following veggies are optional and would not recommend using all at once. Add the hearty veggies to pot and place back in oven with lid on. Cook for additional 50 minutes.
Step 4: All the following veggies are optional and would not recommend using all at once. Add any remaining vegetables to pot and place back in oven with lid on. Cook for additional 10-15 minutes.
I would not recommend using every vegetable mentioned in ingredients. The more you use, the less amounts you will want to use.
