So good for serving guests, especially out on the grill on a terrific summer day.
1. In a food processor, mince the scallions, garlic and parsley.
2. In a medium-size bowl, combine the minced vegetables with the turkey, bread crumbs, mustard, Worcestershire sauce, egg white, thyme and pepper, and mix to blend well.
3. Divide the mixture into 4 equal portions and form them into patties 1/2 inch thick.
4. In a large nonstick skillet, warm the oil over medium-high heat until hot but not smoking. Add the turkey patties and cook until well browned on both sides, 3 to 5 minutes for the first side and 2 to 4 minutes for the second side.
I have chopped the turkey at home in my food processor; I've also bought ground turkey breast in my supermarket. Both have worked well! I usually make 5 burgers instead of 4 just because I like less meat.
