The order of the steps here is very important.
Once the mayonnaise is ready you can take small amounts and mix them with other stuff.
Mix with sriracha for example to make hot mayonnaise.
This mayo by itself is a great dip for fried potatoes.
If it is put in a sealed container it can last at least 1 month up to 3 months in the fridge.
1- Place the egg yolk first in the bowl.
2- Add the mustard and start whisking the eggs with mustard for 2 minutes until they stick together.
3- Add the lime juice and mix well.
4- Incorporate slowly the oil while mixing vigorously until all the oil is in, then keep on whisking for 5-6 minutes
5- Add the garlic and mix well (OPTIONAL)
6- Add a pinch of salt and black pepper.
7- Mix very well and taste. Adjust with salt and pepper and lime. You can adjust as well with max of half of tablespoon of Dijon mustard.
This will make around 600 ml of Mayonnaise.
You can take portions of the mayo and flavour them the way you want.
