Smooth, rich vanilla ice cream for 1 1/2 gallon ice cream freezer. Can be easily flavored or recipe changed to/from stove top to microwave preparation and vice versa.
MICROWAVE INSTRUCTIONS:
Hot Mixture:
Heat evaporated milk and sugar for 6 minutes on high in 3 quart glass, mixing bowl. Stir halfway through. **
Cold Mixture:
Break all eggs into 2 quart, glass bowl. Beat with a hand mixer until thoroughly blended. Throw away any strings that hang on beaters as they will separate into cooked egg whites in your ice cream.
Tempering:
Continually beating cold mixture, add 1/2 of hot mixture (1/2 CUP AT A TIME) to cold mixture. Then slowly pour all liquid into 3 quart mixing bowl - again beating the entire time. Microwave for 6 1/2 minutes - stirring at 2, 4, 5, 6, and 6 1/2 minutes. Mixture will thicken and be smooth and creamy. Add lemon juice and vanilla and blend well.
STOVETOP INSTRUCTIONS:
Cook sugar, evaporated milk, and eggs on stovetop on medium for 20 minutes stirring continually to keep milk from sticking to the pan or burning. ** Throw away any strings that hang on beaters as they will separate into cooked egg whites in your ice cream. Add lemon juice and vanilla and blend well.
For variety, blend in any combination of the following:
* 3 cups puréed fruit
* 4-6 ounces espresso
** 9 unsweetened baking chocolate squares (chop and add to hot mixture, so it will melt easily).
Chill for 2-4 hours (preferably overnight as mixture will be boiling hot and take a lot of ice cream freezer time otherwise).
Pour cooled mixture into ice cream freezer and fill freezer with 2% milk (or your choosing) to fill line.
