1. Preheat the oven to 425 degF. Line a large, rimmed baking sheet with parchment paper. Place a wire cooling rack on the parchment-line baking sheet and coat the rack well with non-stick cooking spray.
2. In a large bowl, combine the honey, mustard, salt, and pepper. Add the chicken and the chicken and stir gently to coat.
3. Use a knife or a mini food processor to roughly chop the almonds; they should be about the size of sunflower seeds. Dump the nuts onto a large sheet of parchment paper and spread them out. Press the coated chicken tenders into nuts until evenly coated on all sides. place the chicken on the prepared wire rack.
4. Bake for 15 to 20 minutes, or until the internal temperature of the chicken measures 165 degF on a meat thermometer and any juices run clear. Serve immediately.
