1. Melt up to three tablespoon coconut oil over a
2. medium fl ame, then toss in the minced onion
3. and garlic.
4. Fry the minced onion and garlic in the hot fat
5. until fragrant and translucent. Allow its edges
6. to caramelize a bit.
7. Reduce the heat to low, then spoon about 1/4
8. cup tomato paste into the saucepan. Take
9. care because the tomato paste could splatter
10. in the hot fat.
11. Stir two cups honey into the tomato paste.
12. Continue to stir the sauce together until the
13. molasses completely dissolves into the tomato
14. paste and the sauce becomes uniform in color.
15. Stir unrefi ned sea salt and spices into the
16. sauce and continue to stir until the fl avorings
17. are fully dissolved in the sauce.
18. Continue to cook over a low fl ame for another
19. twenty minutes, taking care not to let the
20. sauce bubble.
21. Pour the sauce into a mixing bowl and allow it
22. to cool to blood temperature.
23. Stir in fresh whey and transfer to a mason jar
24. or vegetable fermenter, allowing to ferment at
25. room temperature for three to fi ve days.
26. Season with vinegar, as suits your palate and
27. transfer to the refrigerator.
28. Homemade lacto-fermented barbecue sauce
29. should keep indefi nitely if properly refrigerated
