Chicken thighs in Indonesian honey ginger sauce
1. Mix honey, soy sauce, garlic and ginger in small saucepan and cook over low heat until the honey is melted.
2. Arrange chicken in the bottom of one or two casserole dishes, one layer only, skin side down.
3. Pour sauce over chicken, cover with foil, and marinate over night.
4. Bake for 30 minutes at 350 degrees, covered with the foil.
5. Uncover, turn chicken skin side up, increase the temperature to 375 degrees and bake for an additional 30 minutes.
6. Cook rice to go with chicken.
