Brown roast in a saute pan, place in Slow Cooker with parsley, thyme, horseradish and mustard. Add potatoes, mushrooms, broth, tomatoes, onion, bell peppers, wine, garlic, and bay leaf to Sow Cooker. Cover, cook on LOW 4 to 6 hours. Remove and discard bay leaf before serving.
