Put pineapple juice in top of double boiler (I use regular sauce pan). Beat in egg, sugar, and flour. Cook until thickened. In a round or square cake/pie plate, layer the pineapple, cream cheese, and marshmallows and pour cooked mixture over pineapples. Add grated cheese. Bake 10 minutes at 450 degrees until bubbly. Serve hot.
Especially good as a leftover warmed up in the microwave.
