One of our families traditional food for Easter is Hrutka. This is a very basic egg cheese. This food is traditionally served as a side for the Easter meal. Leftover ham sandwiches get a slice of Hrutka and a slather of Hrin which is a mixture of beets and horseradish.
*Prepare a colander with 4 layers of cheese cloth. Let the cloth drape over the sides of the colander. Making sure it is large enough to hold the cheese ball (about the size of a grapefruit).
*Whisk together the eggs in the top of a double boiler (not over the heat).
*Mix the eggs and milk together until blended.
*Add sugar, salt, and vanilla. Blend well.
*Put the double boiler over medium heat slowly stirring until the mixture looks like "curds and whey". Starting around 150F, it will begin to seem thicker. Stir gently to distribute the heat.
*Keep cooking and gently stirring as the curds form. It will look like ricotta, or like scrambled eggs.
*After all the curds have formed, turn off the heat. The remaining milk (whey) will look "cloudy clear".
*In the prepared colander, pour in the curds and let the whey flow through. Gather up the ends of the cheese cloth to form a ball. Then twist and squeeze tightly to help remove as much of the excess moisture that you can. Tie off the cloth so the cheese ball can be hung and allowed to drain for a few hours. Put in the fridge to firm up. Serve next day.
