1. Put the chickpeas, tahini, olive oil, garlic, cumin or paprika, lemon juice, and salt and pepper in a food processor. Begin to process, slowly add reserved chickpea liquid until a smooth puree is formed.
2.Taste and adjust seasoning or lemon juice as needed. Serve drizzled with olive oil and sprinkled with paprika. Garnish with parsley.
-Add a tsp of zataar seasoning if desired.
