1) Turn Instant Pot to SAUTE setting. When display says HOT add in the sausage and break it up. Brown for about 5 minutes. Drain excess great. Add in the garlic and saute for 30 seconds. Turn off Instant Pot.
2) Add in 2 cups of the chicken broth and scrape bottom of Instant Pot so that nothing is sticking.
3) Break the fettuccine noodles in half and lay them on top of the sausage in a criss cross pattern.
4) Pour remaining 1-1/2 cups of broth over the top of the noodles. Press to submerge as much as possible, but not all of the noodles will be covered, and that is fine.
5) Add spinach over the top of the chicken broth. It seems like a lot, but it will shrink down to almost nothing.
6) Cover Instant Pot and secure the lid. Make sure valve is set to SEALING. Set the manual/pressure cook button to 5 minutes. When time is up, let the pot sit for 5-10 minutes and then move the valve to release the steam. When there is no more steam, remove the lid.
7) Stir the contents of the Instant Pot to combine, then add the grated Parmesan cheese and the heavy cream to the mixture. Continue stirring to combine it, and it should begin to boil very quickly. Keep stirring for about 2 minutes to get the cream heated through and the cheese melted. Add salt and pepper to taste.
8) Spoon servings into bowls, and sprinkle shredded Parmesan Cheese over the top. Serve with a green salad and French bread.
