nice with brown bread
slice leeks thinly. heat butter and oil in large heavy pan and gently cook the leeks in it covered 10-15 min until softened but not brown.
grate cheese coarsely and dd it to the pan stirring over low heat until melted. add flour cook 2 min add pepper and mustard to taste.
stir in stock bring to boil cover, simmer 15 min check seasoning.
serve garnished with chives and grated cheese and fresh bread
