This recipe is Italian in origin and created by me from the description given me by a good friend with Italian ancestry. His mama made it and the whole family loved it! Surprisingly my Irish rooted kids love it too!
Bring some salted water to a boil in large pot. Remove large stems from greens and cut greens into approximate 1" strips. Cook greens in boiling, salted water for about 10 min. Greens will be soft but should still be bright green. While greens are cooking chop garlic. Remove greens and run under cold water. Drain and using a paper towels folded into several layers, remove the water from the greens by pressing down with back of spoon or your hand. In large skillet, heat olive oil. Saute garlic in pan until just starting to brown. Add the dry bread crumbs and stir until starting to brown, then add greens. Salt and pepper to taste. Stir the mixture, mixing the greens with the bread crumbs. Cook until mixture is heated through. Stir in parmesan and remove from heat. Serve immediately.
