First get all of your weighed out ingredients. Then put your pound of butter in the microwave for 4 minutes.
Put your warm water in the mixer first followed by your sugar and yeast, mix well.
Next, dump your 10 pounds of flour in the mixer followed by your eggs, butter and salt. It's very important salt goes last.
Let mix for 10-12 minutes. Next you'll roll your ball of dough and continue folding every side underneath until all air bubbles have escaped.
Cut the ball of dough into 2 , repeat the same process by forming both balls of dough. Once finished, put both dough balls onto full size buttered baking pans. And slice a cross almost all the way.
Carefully push all four sides down flat onto the pan.
Set pans aside until the dough has risen, should take 2 hours. Once risen, pat the dough down with finger tips, spread oil onto dough then salt lightly. Wait another hour to throw in oven.
Once risen again, put in the over for 325F for 8 minutes. Once done, take out for toppings, top your bread with whatever your heart desires then put back in for another 8 minutes on same tempature. Now your done.
Be very careful while handling dough that is still rising for it can deflate if handled recklessly.
