This is a great, light, side dish to serve with grilled chicken, pork, or seafood; and it's a great choice for summer potlucks or parties. You can make it the night before because it's flavor is best after marinating over night, there's no mayo so it can handle sitting out at a party, and the best part is it's healthy and very delicious!
1) Place green beans and cauliflower in a pot with 1/2 c. water and simmer 5 minutes or till crisp tender. Drain well rinsing under very cold water.
2) Meanwhile, toss the tomatoes, garbanzo beans, olives, and sun-dried tomatoes in a large bowl. Add the beans, cauliflower, and dressing. Toss lightly to coat everything. Add salt, pepper, onion and garlic powder to taste.
3) It can be served immediately at room temp if desired, but chilling for a few hours to overnight is best.
